Cock Of The Walk Pickled Onion Rings

There was a restaurant in Mobile called the Cock of the Walk.  It had some of the best skillet cornbread and pickled onion rings.  They closed down several years ago and I've missed them.  I took to craving the pickled onions and decided I'd check the Internet for a recipe and, lo and behold, there I found it.  I made them this weekend and they're delicious.

2 cups cider vinegar
4 teaspoons of salt
1/2 cup of sugar
1/2 teaspoon garlic salt
1/4 teaspoon white pepper
4 cups of sliced sweet onions

Combine all except onions in a large saucepan.  Bring to a boil.  Drop in onion slices and turn off heat.  Let cool and then refrigerate.

Years ago there WAS a Cock of the Walk near me in Pelham, AL. It was a fun place to go, while it lasted...Was introduced to fried pickles there, and tin plates!

I know of two Cock of the Walk restaurants still open. Natchez, MS and Ridgeland, MS. I love 'em!

Maybe you can give some advice? I've tried this recipe and they are so vinegary they're inedible. What could be wrong? I've had these many times at the Walk in Jackson, MS. and they sure didn't taste like these. What can I do? Try white instead of cider or add water? Help! I'm craving these so much!

I found the vinegar to be strong the last time I made them for Independence Day. I'm going to try it again by increasing the sugar to 1 cup and decreasing the vinegar to 1-1/2 cups. I may even try changing to white vinegar. I attributed to change this last time to letting them soak overnight before serving. The first time we ate them all, leaving none to sit over night.
